Sometimes I get a craving for chocolate in the morning & after dinner…More like all day but that’s a different story.. Recently I have been on a granola kick since my friend brought me a bag of fresh walnuts. This recipe makes enough to last for two people for the week (although mine doesn’t always last that long)! Add this granola on top of yogurt, smoothies or eat a handful plain. I’ve been eating this as a treat after dinner on top of greek yogurt!
⅓cupchocolate chips or dried fruitAdd less or more depending on how chocolaty or fruity you want it.
Instructions
Preheat the oven to 340 degrees. Line two 18×13 cookie sheets with parchment paper.
In a large bowl, mix oats, chia seeds & nuts. Set aside
Melt coconut oil, add in maple syrup, cocoa powder & vanilla. This should be a thick paste.
Pour over the oat mixture. Stir until all ingredients are well mixed together.
Spread evenly on both cookie sheets & sprinkle with salt. Bake for 20 minutes. I like to check this around 15 minutes to make sure it’s cooking evenly. You want it golden, not burned!
Let dry completely then mix in chocolate chips or dried fruit.
