Preheat the oven to 340 degrees. Line two 18x13 cookie sheets with parchment paper.
In a large bowl, mix oats, chia seeds & nuts. Set aside
Melt coconut oil, add in maple syrup, cocoa powder & vanilla. This should be a thick paste.
Pour over the oat mixture. Stir until all ingredients are well mixed together.
Spread evenly on both cookie sheets & sprinkle with salt. Bake for 20 minutes. I like to check this around 15 minutes to make sure it’s cooking evenly. You want it golden, not burned!
Let dry completely then mix in chocolate chips or dried fruit.
Store in an airtight container. I use mason jars!
