Chocolate Granola with Walnuts & Maple Syrup

Makes 6 cups granola
Servings: 6 Cups

Ingredients

  • 4 cups rolled oats
  • ¼ cup chia seeds
  • 1.5 cups raw walnuts
  • ½ cup coconut oil
  • cup pure maple syrup
  • cup cocoa powder
  • 1 teaspoon vanilla
  • ½ tsp salt I use Pink Himalayan Salt.
  • cup chocolate chips or dried fruit Add less or more depending on how chocolaty or fruity you want it.

Instructions

  • Preheat the oven to 340 degrees. Line two 18x13 cookie sheets with parchment paper.
  • In a large bowl, mix oats, chia seeds & nuts. Set aside
  • Melt coconut oil, add in maple syrup, cocoa powder & vanilla. This should be a thick paste.
  • Pour over the oat mixture. Stir until all ingredients are well mixed together.
  • Spread evenly on both cookie sheets & sprinkle with salt. Bake for 20 minutes. I like to check this around 15 minutes to make sure it’s cooking evenly. You want it golden, not burned!
  • Let dry completely then mix in chocolate chips or dried fruit.
  • Store in an airtight container. I use mason jars!
