Rainy Day Food Prep

Well the weather is finally cooling down & it feels soooo good to be outside without dripping sweat. Saturday was very rainy, which forced me to food prep on Saturday instead of Sunday.

This week for lunches I made: Turkey Burger Patties, Grilled Mushrooms, Roasted Green Beans & Sweet Potato Hay Stacks. Super quick & not to mention yummy!

I love my Paderno Spiralizer SO much. I will spiralize anything that fits. This week I wanted sweet potatoes but not plain boring baked ones.

I spiralized up some medium sized SP, weighed them in appropriate serving sizes, then sprinkled with olive oil, cavenders, garlic salt, parsley & pepper flakes. Baked on 400• until crispy on the bottoms.

For the Turkey Burgers I just mixed, ground turkey, 1 egg, diced onions, whole grain mustard, Worcestershire sauce, cavendars & pepper.  {I used the same thing for the mushrooms just added olive oil & left out the mustard}

As for the Green Beans, I just set them in a Corningware Cassarole Dish with olive oil, garlic, dash of balsamic vinegar, salt & pepper flakes.


The finished product & of course I added a Lenny & Larry’s cookie. So.Good.
